Grilled Cardamom Pineapple

Serve with ROCKTAILS Passionfruit and Pineapple Fusion for a quick and delicious desert that's sure to impress. You could even use the BBQ intead of grilling.

INGREDIENTS

  • 1 small, ripe pineapple 
  • 1 tbsp granulated sugar
  • Seeds from 8 cardamom pods
  • 1 pod of ROCKTAILS Passionfruit and Pineapple Fusion

HOW TO PREPARE

Preheat the grill to high. Peel the pineapple, halve, then cut each half into thick slices. Remove the cores, then lay the slices on a foil-lined baking sheet. In a mortar and pestle (or put in a sandwich bag and bash with a rolling pin), crush the sugar with the cardamom seeds. Sprinkle over the pineapple wedges, pop directly under the hot grill and cook for 4-5 minutes, or until hot and the edges are beginning to char. Serve the slices, drizzling with any cooking juices and topping with a scoop of ROCKTAILS Passionfruit and Pineapple Fusion straight from the freezer.
